Baked Zucchini

Ingredients

  • 4 large tomatoes, peel and chop
  • 1 minced garlic
  • ¼ cup olive oil
  • 1 teaspoon sugar
  • ½ teaspoon oregano
  • ½ teaspoon mint
  • salt and pepper
  • 6 cup sliced zuke
  • 2 sliced onions
  • ¼ cup crumbled feta
  • ½ cup dry bread crumbs
  • 1 tablespoon butter

Directions

Heat oven 350°. Mix first 7 ingredients then layer in greased 9″x13″ pan zuke,tomato mix, and onion. Cheese on top, then crumbs, then bits of butter. Bake 50 minutes. This is also good without the cheese.
