Rhubarb Muffins

Simply in Season

Mix well:

  • ½ cup flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

In a separate bowl, mix well:

  • 1 cup buttermilk, or sour milk, or plain yogurt
  • ¾ cup brown sugar
  • ½ cup oil
  • 1 beaten egg
  • 1 teaspoon vanilla

Add dry ingredients into wet ingredients until just moist.  Then stir in:

  • 1 ½ cups diced rhubarb
  • ½ cup toasted, chopped nuts

Fill greased muffin tins for 12 muffins.  Mix and sprinkle on top of batter:

  • ¼ cup sugar
  • 1 tablespoon butter melted
  • 1 teaspoon cinnamon
  • 1 teaspoon flour

Bake in preheated oven at 375° until toothpick inserted in center comes out clean, about 20 minutes. Cool on racks.
