Peanut Butter Balls

Use organic ingredients to make these that much more healthy. I am a member of a food coop that meets at the Quabbin Natural Foods in Barre. We order through United Natural and get huge discounts on how much one would pay in the store.

Ingredients

  • Peanut Butter
  • Carob powder
  • Rolled oats
  • Raisins
  • Sunflower Seeds
  • Honey
  • Sesame seeds

Directions

As with all of my recipes, you won't get exact proportions out of me because I never take time to measure. I start with about half of a 9 pound peanut butter pail. To that I add a bunch of oats to soak up the peanut butter oil and start getting the mixture a little less sticky - let's say 2 - 3 - 4 cups. Then I throw in half a can of carob powder: oh about 1 - 2 cups. Then I add sunflower seeds: 1 - 2 cups and raisins: 1 - 2 cups. I check my consistency while adding ½ - 1 cup honey and add more oats or sunflower seeds as necessary. We are attempting to get the whole business into shape to be able to roll it into balls.

When you are happy with the consistency, make balls or sticks or squares or whatever you please and roll them in sesame seeds. I put them on a plate and freeze them. Later I take them out of the freezer and store them in plastic bags back in the freezer. They make a high protein snack for when you are in a hurry, on the run, or needing a quick, but long lasting fix. One of these can keep your blood sugar up for a couple of hours while you are working hard.
