Mollie Katzen's Moosewood Cookbook


  • 3 cups of fresh basil without the stems
  • ¾ cup parsley or you can substitute cilantro
  • 1 bulb of garlic
  • ½ cup nuts of your choice
  • ¾ cup Parmesan
  • ½ cup olive oil
  • ¼ cup butter melted
  • Salt to taste


Peel the garlic and process it and the nuts in the food processor. Remove. Process the basil and the parsley with the oil and the butter, in small batches (the oil and butter make the processing of these herbs possible. Mix all ingredients together and serve pesto on cooked pasta of your choice.
