Potato Wedges with Oregano-Garlic Butter

Ingredients

  • 3 large baking potatoes cut in thick wedges
  • 3 tablespoons olive oil
  • 5 tablespoons butter
  • 2 to 3 garlic cloves, minced
  • 2 teaspoons chopped fresh oregano
  • Salt and pepper

Directions

Cook potatoes just till done, cool, brush with oil. Melt butter, when it foams add garlic and oregano, cook for 5 minutes, careful not to burn. Spread on potatoes, add salt and pepper.
