Springtime Pesto

Ingredients

  • 10 garlic scapes chopped
  • 3 cups of any spring greens (spinach, chard, Asian greens)
  • 5-10 sprigs of parsley
  • ¾ cup sunflower seeds
  • ½ cups oil
  • 1 teaspoon salt
  • Cheese (optional)

Put everything in a food processor and viola - add to pasta, grains, or a sandwich!
