Ingredients

  • 4 heads garlic, but more is better
  • several sprigs fresh oregano
  • 2 whole (2 1/2 to 3 pound) chicken breasts
  • 2 tablespoons olive oil
  • Salt and Pepper

Directions

  1. Preheat oven to 400°. Slice tops from garlic heads, reserving bottoms, arrange the tops, cut sides down in the center of an 11×17 pan. Place 1-2 sprigs oregano over each garlic top, and arrange the chicken breasts over the garlic.

  2. Place garlic bottoms, cut side up, next to chicken. Drizzle all with oil, add salt and pepper.

  3. Roast 30 minutes, then turn garlic bottoms over and rotate pan and roast another 30 minutes.
