Hot Marinated Cauliflower

  • ¼ cup olive oil
  • 2 cups chopped onion
  • 1 teaspoon dry oregano, basil, thyme, rosemary
  • 1 ½ teaspoon salt
  • Black pepper, plenty
  • 3 bay leaves
  • ½ lb sliced mushrooms
  • 10 cloves garlic chopped
  • ⅓ cup red wine vinegar
  • 1 cup water
  • 4 tablespoon tomato paste
  • 2 small heads cauliflower in 1 inch pieces
  • 1 lb pasta
  • Parmesan for the top

Heat oil in Dutch oven over medium heat and sauté first 6 ingredients for 8-10, min. Add next 4 ingredients and whisk till smooth then add cauliflower. Bring to a boil, cover, turn down heat to very low and cook 9-10 minutes till cauliflower is tender. Meanwhile cook pasta and toss together using parmesan on top.
