  • ¼ cup olive oil
  • 2 diced yellow onions
  • 3 minced garlic cloves
  • 2 ½ lb chopped potatoes
  • 6 cups low sodium chicken broth
  • 1 lb kielbasa cut in ½” pcs.
  • 1-2 large bunches of kale, chopped small

In a large soup pot sauté onion 5-7 min. add garlic for 2 more minutes, add potatoes for 5 minutes, pour in stock and bring to a boil. Turn down and simmer 20 min. Remove pot from burner and roughly mash the potatoes in the pot leaving some small chunks. Add kielbasa and cook for 10 min., then add kale for last 5 minutes.
