Roasted Beet Salad
Besides being rich in folate and potassium, beets are loaded with beta-cyanins, which give them their purple hues as well as their anti-inflammatory and anticancer properties. Beet juice can stain your fingers, so you might want to slip on a pair of kitchen gloves before you peel the roasted beets here.
- 1½ lbs scrubbed and trimmed beets
- 2 tablespoons olive oil
- 6 cloves garlic minced
- 6 cups greens or salad mix
- 3 tablespoons balsamic vinaigrette
Toss beets, oil and garlic in baking dish. Bake at 400° for 40 minutes. Cool. Scrape off skins and slice into rounds. Toss greens with vinaigrette, arrange beets on top, and can top with a little blue cheese.
