Special Indian Tomato Sauce

  • 2 large cans diced tomatoes (no salt added) ot equivalent fresh tomatoes, chopped
  • ½ teaspoon salt
  • Extra virgin olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon fresh ginger, chopped
  • ¼ cup onions, chopped
  • 1 ½ teaspoons ground coriander
  • 1 ½ teaspoons paprika
  • 1 ½ teaspoons ground cumin
  • 3 cinnamon sticks
  • 3 bay leaves


  1. Sauté onions and garlic in olive oil until onions are translucent. Add spices and sauté to coat onions.

  2. Add tomatoes, mix well and simmer on med to low heat until thoroughly heated and flavors are melded.
