This recipe calls for spinach but you can use other greens instead.


  • 1 to 2 lbs spinach (or other kind of greens)
  • ½ bunch dill
  • 2 garlic cloves crushed
  • 1 bunch chopped scallions
  • Olive oil, salt, pepper
  • 1 cup short grain rice

Wash and chop the greens, dill and scallions. Sauté the garlic and scallions in some olive oil not browned. Add the chopped wet spinach, salt and pepper to taste. Simmer until well wilted add 3 cups hot water and 1 cup short grain rice. Simmer uncovered for 15 minutes or so and add a squirt of lemon juice at the end.
