Tomato Potatoes

  • 2 lbs potatoes
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ cup chopped tomatoes
  • Dry Italian seasoning

Wash potatoes and cut in chunks about an inch thick. Brown in hot oil. Then add 3 c hot water, salt, tomatoes, and herbs. Cook briskly till water is almost gone. Makes a nice sauce with the potatoes.
