Spring’s gift to your good health

This week, Mario, Leo, Julie, working shareholder Morgan and I harvested dandelions from the strawberry beds. The plants were vibrant green and enormous – abundant, mounded rosettes of slender toothed, notched leaves whose vigor and beauty spoke of the fertility and health of the soil. “They do well here” Julie noted as she set to work, sweeping the greens up in a loose bunch with one hand, swiftly severing the greens with the other. As the greens fell to my knife, I delighted in the crisp sound the greens made as they gave way to the blade, the ooze of the milky white sap that rose from the cut stems while I picked out stray bits of mulch and grass“.
