Quick Half-Sour Pickles


  • 2 ½ lb cucumbers, small are nice but can use larger, cut smalls into ½ and large into spears
  • 2 large cloves garlic cut in half
  • 6 to 8 sprigs dill
  • ¼ t. dill seeds, if no fresh dill add another t. of dill seed
  • 1 tablespoon pickling spices

Boil for 2 minutes:

  • ¼ cup kosher salt
  • ¼ cup white vinegar
  • 2 ½ quart Water

Wash cucumbers and dill. Place cukes, dill, garlic and spices in large crock. Or use 2 ½ gallon jars and split up ingredients. Cover with liquid, keep covered with cukes in liquid at room temperature for 12 hours and then keep in fridge for several weeks.
