Quick Half-Sour Pickles
Ingredients
- 2 ½ lb cucumbers, small are nice but can use larger, cut smalls into ½ and large into spears
- 2 large cloves garlic cut in half
- 6 to 8 sprigs dill
- ¼ t. dill seeds, if no fresh dill add another t. of dill seed
- 1 tablespoon pickling spices
Boil for 2 minutes:
- ¼ cup kosher salt
- ¼ cup white vinegar
- 2 ½ quart Water
Wash cucumbers and dill. Place cukes, dill, garlic and spices in large crock. Or use 2 ½ gallon jars and split up ingredients. Cover with liquid, keep covered with cukes in liquid at room temperature for 12 hours and then keep in fridge for several weeks.
